    Coconut juice is extremely good for dehydration so this is a great soup when someone is under the weather.

    Ingredients
    Serves: 5 

    • 1 tablespoon butter
    • garlic, to taste
    • 1 apple, peeled and diced
    • 1 tablespoon diced carrot
    • 1/2 small pumpkin, peeled and diced
    • 1/2 bunch broccoli, diced
    • 4 cups (1 litre) water
    • 2 cups coconut juice
    • 200ml coconut milk
    • 2 chicken stock cubes
    • 1/2 cup polenta
    • salt, to taste

    1. Melt the butter in a saucepan and saute the garlic, apple, carrot, pumpkin and broccoli until softening.
    2. While the vegetables are cooking, combine the water, coconut juice, coconut milk, stock cubes and polenta in a blender. Blend.
    3. Add the liquid to the vegetables and cooked until thickened. Add salt to taste.
