Chocolate Caramel Cheesecake Cake... Made with Coca Cola

    A really moist chocolate cake made with Coca Cola and a filling made with cream cheese and caramel top and fill. "Yummo." If you don' t like caramel, then the chocolate cake with just the icing is one of the best chocolate cakes you can make.

    Makes: 1 cake

    • 2 cups sugar
    • 1/2 teaspoon salt
    • 2 cups plain flour
    • 113g butter
    • 1/2 cup canola oil
    • 3 tablespoons cocoa
    • 1 cup Coca Cola(TM)
    • 1/2 cup milk
    • 2 eggs
    • 1 teaspoon vanilla
    • 1 teaspoon bicarb soda
    • Filling
    • 500g cream cheese, softened
    • 1 can caramel top and fill
    • Icing
    • 2 cups icing sugar
    • 2 tablespoons cocoa, sifted
    • 1 tablespoon butter
    • 3 tablespoons milk

    1. Preheat oven to 180 degrees C. Line a Swiss roll tray with baking paper.
    2. Place sugar, salt and flour in a large mixing bowl. Put aside.
    3. In a small pot, over a medium heat, bring the butter, oil, cocoa and Coca Cola to the boil, stirring.
    4. Using an electric mixer, add hot mixture into flour and sugar and beat well.
    5. Add milk, eggs, vanilla and bicarb soda and beat well. Pour into tray.
    6. Cook 20 -25 minutes or until a skewer comes out clean. Cool completely.
    7. About an hour before serving make the cheesecake filling: With an electric mixer, beat cream cheese until smooth. Add the caramel and beat till well combined. Refrigerate for an hour.
    8. Icing:

    9. Beat all icing ingredients together, adding milk a bit at a time until spreading consistency.
    10. Assembly

    11. Cut cake in half widthways. Place 1 piece on a plate. Spread with caramel cheesecake filling.
    12. Place other piece of cake on top of cheesecake filling, then spread cake with icing and decorate.


    This is actually quite easy to make even though the recipe looks long (I probably put in more steps than needed).
