Clean, trim and dry berries then put aside until needed. I like to use raspberries and strawberries.
Prepare the panckake mixture as per instructions, add the red food colouring at the end, adjust the amount based on results.
Cook the pancakes in a moderately heated frypan. Use a ladle or large spoon so that the pancakes are all the same size, making them look better when stacked.
When all the pancakes are cooked divide equally among four plates, drizzle with the vanilla yoghurt (slightly whisk the youghurt if it is chunky and won't drizzle). Garnish with fresh berries and serve.
