Line a dessert bowl (the serving size) with plastic wrap. Add to the freezer to cool while preparing the ice cream.
In a small saucepan over a moderate heat add the butter, brown sugar, mixed fruit and milk. Continue to heat until simmering then add the bicarb soda. Simmer for an additional 5 minutes or until the fruit is puffed up. Add the brandy and stir through.
Add to a large bowl the softened ice cream (about 5 minutes out of the freezer is enough), then stir through the still warm fruit mixture until well combined.
Spoon all the mixture into to cold and lined dessert bowl. Cover the top with plastic wrap and return to the freezer. Leave for at least 6 hours or longer if possible.
Remove by turning upside down on a plate, drizzling with chocolate and garnishing as desired.
