Serves: 8

  • 2 packets Sao biscuits
  • 1 packet (100g) Whitewings vanilla instant pudding(TM)
  • 1 packet (100g) Whitewings strawberry instant pudding(TM)
  • 2 x 600ml cartons thickened cream
  • Icing
  • 4 cups icing sugar
  • 5 teaspoons strawberry essence
  • 3 - 4 drops pink food colouring
  • 1 tablespoon butter, softened
  • about 1/2 cup milk, to mix

Preparation:40min  ›  Extra time:1hour chilling  ›  Ready in:1hour40min

  1. Line bottom of a large, deep plastic or metal container with biscuits, cutting to fit if necessary. (I used a 33 x 22cm.)
  2. Quickly whisk 600ml thickened cream into strawberry pudding mix until thickening but not set.
  3. Pour over biscuits and smooth top. Refrigerate for 1/2 hour.
  4. When ready, quickly whisk the other 600ml thickened cream into vanilla pudding mix until thickening but not set.
  5. Pour over strawberry pudding, smoothing top.
  6. Cover with Sao biscuits, again cutting to fit if necessary. Refrigerate while making icing.
  7. Icing:

  8. Mix all ingredients together, adding milk a bit at a time to make a smooth, spreadable paste.
  9. Spread over biscuits.
  10. Keep refrigerated. Cut into squares as needed.

If you can't get strawberry instant pudding, add strawberry essence to taste and a few drops pink food colouring, mixed into the cream, to a packet of vanilla instant pudding mix.
