Beat the eggs until stiff. Mix in the icing sugar and vanilla sugar. Next, add cinnamon and ground almonds and mix into a dough. Roll the dough out on a sheet of baking paper to 1cm thickness, then place in the fridge for 30 minutes.
Preheat the oven to 100 degrees C, convection if possible. Cut out the stars and place on a baking tray lined with baking paper. Bake 15 minutes, then let cool.
To make the icing, beat the egg white until stiff then add icing sugar until creamy. Use to glaze the cooled stars.
