Gingerbread with Caramelised Apples

    A lovely way to serve gingerbread, topped with apples that have been simmered in cider and cinnamon. Very easy and good for Christmas.

    Serves: 4 

    • 40g raisins
    • 400ml semi-dry cider
    • 2 golden delicious apples
    • 1 tablespoon butter
    • 1/2 teaspoon cinnamon
    • 3 teaspoons brown sugar
    • 4 slices gingerbread loaf

    1. Soak the raisins in the cider for 1 hour until plump. Meanwhile, peel and core the apples and slice into thin wedges.
    2. Melt the butter in a nonstick frypan and add the apples. Sprinkle with cinnamon and brown sugar, add the raisins and cider and simmer 15 minutes.
    3. Toast slices of gingerbread and place on serving plates. Top with apple slices, raisins and some of the juices. Serve!
