White Christmas 'Gingerbread' Men

    A combination of two favourites, white Christmas and gingerbread men biscuits. You can also use other shaped cutters such as stars or Christmas trees.

    • 350g white chocolate melts
    • 2 cups Rice Bubbles
    • 1 cup desiccated coconut
    • 1/2 cup glace cherries, diced
    • 1/2 cup dried apricots, diced
    • 1/2 teaspoon vanilla essence

    1. Butter a baking sheet, or a sheet of greaseproof paper.
    2. Melt the chocolate in the microwave or in a double boiler until smooth, stirring.
    3. Stir in all the remaining ingredients. Spread the mixture out on the baking sheet or greaseproof paper (I think paper is easier). Smooth down with a plastic spatula (it helps to butter the spatula too) to about 1/2 cm thickness.
    4. When the mixture is firm but not hard, cut out with gingerbread man-shaped biscuit cutters. Any leftovers can be moulded together and served in patty cups as crackles.
