White Christmas Crackles

A cross between White Christmas and a 'white' chocolate crackle! About the easiest treat to make there is. I prefer to use fresh shredded coconut over desiccated.

Ingredients
Makes: 12 crackles
- 340g white chocolate melts
- 2 cups Rice Bubbles
- 1 cup shredded coconut
- 1 cup mixed dried fruit or glace cherries, diced

Ready in:1hour5min
- Melt the chocolate in a double boiler over low heat.
- When melted and smooth, stir in the Rice Bubbles, then the coconut and dried fruit.
- Using a spoon, scoop spoonfuls of the mixture into patty cups. Place on a tray and let harden in the fridge, about 1 hour.
