White Christmas Crackles

    A cross between White Christmas and a 'white' chocolate crackle! About the easiest treat to make there is. I prefer to use fresh shredded coconut over desiccated.

    Makes: 12 crackles

    • 340g white chocolate melts
    • 2 cups Rice Bubbles
    • 1 cup shredded coconut
    • 1 cup mixed dried fruit or glace cherries, diced

    Preparation:5min  ›  Extra time:1hour chilling  ›  Ready in:1hour5min 

    1. Melt the chocolate in a double boiler over low heat.
    2. When melted and smooth, stir in the Rice Bubbles, then the coconut and dried fruit.
    3. Using a spoon, scoop spoonfuls of the mixture into patty cups. Place on a tray and let harden in the fridge, about 1 hour.
