These are flourless Swiss Christmas cookies made from almonds, sugar and chocolate. Cut them out in festive shapes.


Makes: 40 cookies

  • 300g sugar
  • 300g ground almonds
  • 50g dark chocolate, grated
  • 1 teaspoon cinnamon
  • pinch ground cloves
  • 3 egg whites
  • 1 teaspoon lemon juice
  • extra sugar, as needed

Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Combine the sugar, almonds, chocolate, cinnamon and cloves in a mixing bowl and mix well. Add the egg whites and lemon juice and knead into a firm dough.
  2. Grease a baking tray.
  3. Sprinkle a working surface with sugar and roll out the dough to about 1cm thickness. Cut out shapes and place on the baking tray. Let rest in a cool place 2-3 hours. Preheat oven to 150 degrees C.
  4. Bake about 20 minutes. The cookies should still be slightly moist inside.
