In a bowl, combine flour, icing sugar, salt, ginger, coconut and orange zest. Beat the egg and egg yolk together and add with the diced butter. Knead quickly into a smooth dough. Cover with plastic wrap and chill 1 hour.
Preheat oven to 190 degrees C. Grease a baking tray.
Roll out the dough and cut out cookies with a 5cm star shaped cutter. Place on the baking tray and bake 10-12 minutes.
While still hot, brush the cookies with egg white and sprinkle with shredded coconut. Place a cherry half in the middle of each.
