    Christmas star cookies coated with coconut and a glace cherry in the centre. Easy to make and so delicious.

    Ingredients
    Makes: 40 cookies

    • 250g flour
    • 150g icing sugar
    • pinch salt
    • pinch ground ginger
    • 200g dessicated coconut
    • zest of 1 orange
    • 1 egg
    • 1 egg yolk
    • 180g cold butter, diced
    • To decorate
    • 1 egg white
    • desiccated coconut
    • glace cherries

    1. In a bowl, combine flour, icing sugar, salt, ginger, coconut and orange zest. Beat the egg and egg yolk together and add with the diced butter. Knead quickly into a smooth dough. Cover with plastic wrap and chill 1 hour.
    2. Preheat oven to 190 degrees C. Grease a baking tray.
    3. Roll out the dough and cut out cookies with a 5cm star shaped cutter. Place on the baking tray and bake 10-12 minutes.
    4. While still hot, brush the cookies with egg white and sprinkle with shredded coconut. Place a cherry half in the middle of each.
