Easy Roast Turkey

    The simplest roast turkey recipe with a phenomenal taste. You can stuff it too if you like. Perfect for Christmas when a chicken isn't big enough!

    Makes: 1 roast turkey

    • 1 (4kg) whole turkey
    • 60g butter, softened
    • 3 cloves garlic, crushed
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 1/2 teaspoon paprika
    • 1 large oven roasting bag
    • 2 tablespoons butter
    • 1 tablespoon flour
    • salt and pepper, to taste

    1. Preheat oven to 180 degrees C. Remove any turkey innards, wash turkey and pat dry with paper towels.
    2. Make two cuts through the skin on both of the breasts to form pockets. Mix together the butter and crushed garlic and insert into each of the cuts under the skin.
    3. Rub the turkey well with salt, pepper and paprika. Place in the roasting bag and seal. Place bag in a roasting tin breast side up.
    4. Roast for 2 - 2 1/2 hours. With a meat thermometer it is done when internal temperature reaches 85 degrees C.
    5. When turkey is done, carefully open the roasting bag (watch out for steam). Pour the liquid into the roasting tin and place the turkey on a platter.
    6. Place the tin over gentle heat and add the butter. When melted, whisk in the flour. Stir constantly until it thickens into gravy. Season with salt and pepper as desired.

    I used this recipe today and have to say it has turned out to be the juiciest and tender turkey I have ever cooked. I also put an orange in the cavity for additional flavour. It was so easy and no mess.  -  25 Dec 2017
