Rum Balls with Hazelnuts

    I give away these rum balls every Christmas. They are especially good with freshly toasted hazelnuts.

    Makes: 20 rum balls

    • 150g hazelnuts
    • 50g dark chocolate
    • 200g sugar
    • 1 egg white
    • 2 tablespoons rum
    • 50g chocolate sprinkles

    1. Toast the hazelnuts in a heavy frypan over medium heat, stirring, until the skins start to peel off. Allow to cool then rub with a tea towel to remove skins. Crush in a food processor.
    2. Grate the chocolate and combine with the hazenuts, sugar, egg white and rum into a smooth mix.
    3. With moistened hands, shape into 2cm balls and roll in the chocolate sprinkles. Place in paper patty cases to dry.
