For Christmas or Christmas in July mulled wine is compulsory! I use a whole orange, organic and unsprayed since you'll be using the peel.


Serves: 4 

  • 1 unsprayed orange
  • 10 cloves
  • 8 cardamom pods
  • 4 star anise
  • zest of 1 unsprayed lemon
  • 1 cinnamon stick
  • 1 teaspoon coriander seeds
  • 1 teaspoon aniseed
  • 4 cups (1 litre) dry red wine
  • brown sugar, to taste

Preparation:5min  ›  Cook:1hour  ›  Ready in:1hour5min 

  1. With a peeler or paring knife peel the orange and place the peels in a saucepan. Cut the orange in half, stud with the cloves and add to the saucepan.
  2. Add the rest of the spices and pour in the red wine. Heat to a very gentle simmer and let infuse 1 hour. Do not allow to boil. Add sugar to taste, strain and serve!
