Rum balls made of crushed butter biscuits and rolled in ground hazelnuts. Almond meals works well too in this recipe.


Makes: 40 rum balls

  • 250g butter biscuits
  • 250g butter, softened
  • 1 egg
  • 250g icing sugar
  • 50g cocoa
  • 1 tablespoon rum
  • 250g ground hazelnuts
  • ground hazelnuts, for rolling

  1. Place the butter biscuits between two tea towels and crumble with a rolling pin into crumbs.
  2. Beat the butter with the egg and icing sugar until creamy. Mix in the cocoa powder, rum, 250g ground hazelnuts and crumbs.
  3. Form into balls and roll the balls in the extra ground hazelnuts. Keep in the fridge.
