Makes: 20 to 30 cake pops
1 vanilla loaf cake
2-4 tablespoons your favourite jam (e.g. strawberry, apricot)
white chocolate buttons, as needed
sprinkles or nuts, to decorate
cake pop or ice block sticks
Directions Preparation:1hour › Extra time:1hour10min chilling › Ready in:2hours10min
Crumble the cake into a mixing bowl. Mix in as much jam as needed to make the mixture hold together without crumbling. Cover and chill in the fridge 20 minutes.
With wet hands, roll walnut-sized balls of the cake mixture and place on a baking tray. Place in the freezer for 30 minutes.
Meanwhile, melt some the chocolate buttons in a double boiler or the microwave, and let cool slightly.
Remove the cake balls from the freezer and poke a hole halfway through each one with a skewer.
Dip a cake pop stick into the melted chocolate and insert into a cake ball. Repeat with remaining cake balls, then return to the freezer for 20 minutes. Melt more chocolate if necessary.
Dip each cake pop into melted chocolate to evenly coat. Place the finished cake pops onto a sheet of greaseproof paper to set, or poke the sticks into a block of foam to hold upright if you want them perfectly smooth.
Decorate as desired. Sprinkle with crushed nuts, chocolate shavings, coloured sugar, 100s and 1000s, sprinkles, etc. Let set.
