This is a super Christmas dessert that combines gingerbread and tiramisu. Also a great use for leftover gingerbread.
300ml red wine
1 cinnamon stick
2 whole cloves
3 egg yolks
2 teaspoons vanilla sugar
3 tablespoons orange liqueur
3 egg whites
1 teaspoon lemon juice
300g gingerbread loaf, thinly sliced
cocoa powder, for dusting

- In a small saucepan, combine the red wine, cinnamon stick and cloves then simmer 10 minutes. Let cool.
- Beat the egg yolks with the vanilla sugar and orange liqueur until fluffy. Stir in the mascarpone. Beat the egg whites with the lemon juice until stiff then folk into the egg mixture.
- Dip the gingerbread slices in the red wine and line the bottom of a glass bowl. Spread half the cream over the gingerbread, then repeat layers, ending with cream. Chill in the fridge 4 hours.
- Cut out some paper stars and lay them on top. Sprinkle with cocoa powder then remove the stars for a Christmas look.
Make sure you use fresh organic eggs as they will be raw in this recipe.
