This is my favourite turkey stuffing for the Christmas bird - it contains bacon, Italian sausage and olives for a real wallop.
4 tablespoons butter or margarine
100g bacon, diced
4 cloves garlic, crushed
1 onion, diced
1 spicy Italian sausage, skin removed
1/2 cup green olives, diced
1 carrot, grated
4 cups stale bread cut into small pieces
4 tablespoons parsley, chopped
salt and pepper, to taste
- Melt the butter in a large frypan and add the bacon, garlic and onion. Let it brown but don't burn it.
- Add the crumbled Italian sausage, olives and carrot and saute. Gradually add the bread, stirring constantly. Do not let it get too dry. Stir in the parsley and taste for seasoning.
