Honey Glazed Ham

    Mandatory at all Christmas parties, this baked ham drizzled with honey, mustard and pineapple juice is just wonderful.

    Serves: 6 

    • 1 boneless smoked ham, about 700g
    • 1 onion, quartered
    • 1 bay leaf
    • 1/2 cup honey
    • 1/4 cup brown sugar
    • 2 tablespoons mustard powder
    • cloves, as needed
    • 1 1/2 cups pineapple juice

    1. Place the ham in a pressure cooker with the onion, bay leaf and enough water to cover it. Cook for 5 minutes over high heat.
    2. Remove ham from pressure cooker and place in a roasting tin. Remove the skin but not the fat. Mix the honey, sugar and mustard to form a paste, then spread over the ham. Preheat oven to 220 degrees C.
    3. With a sharp knife, make diagonal cuts on the ham to make diamond shapes. Push a clove into each diamond.
    4. Bake for 40 minutes or until golden brown, basting with the pineapple juice as it bakes.
    5. Place on a serving platter and pour over the thick syrup from the tin.
