Easy Christmas Cake

    This cake is a must on my Christmas table. You can use whatever kind of icing you prefer but I like the cream.

    Makes: 1 cake

    • 200g dates, sliced
    • 50g walnuts, diced
    • 50g slivered almonds
    • 50g dried apricots, sliced
    • 3 tablespoons rum
    • 120g butter
    • 200g sugar
    • pinch salt
    • 3 eggs
    • 350g plain flour
    • 2 teaspoons baking powder
    • 1 cup milk
    • Topping
    • 500g thickened cream
    • 3 tablespoons sugar
    • glace cherries, to decorate

    1. Put the dates, walnuts, almonds and apricots in a bowl with the rum and leave to soak. Meanwhile, preheat the oven to 180 degrees C.
    2. In a bowl, beat the butter with the sugar, pinch salt and eggs until creamy and light. Add the soaked fruit and reserve.
    3. Sift the flour with the baking powder and add to the egg mixture, stirring in alternately with the milk. Stir until smooth.
    4. Grease and flour a 25cm cake tin and pour in the batter. Bake about 1 hour or until a skewer tests clean.
    5. Beat the cream with the sugar until thick. Spread over the top of the cake and decorate with the glace cherries.
