If time is short you can use tinned pineapple instead of chopping up a fresh one to make this Christmas dessert - if you do, drain the syrup.
1 tin sweetened condensed milk
the same tin's measurement of milk
the same tin's measurement of light thickened cream
3 egg yolks, beaten
1/2 cup raisins (white if possible)
1/2 tablespoon cornflour
1 small fresh pineapple, diced
2 tablespoons sugar
1 packet sponge finger biscuits
100g freshly grated coconut

- In a saucepan, combine condensed milk, milk, cream, egg yolks, raisins and cornflour. Cook over low heat, stirring, until thickened. Let cool.
- In a separate saucepan, combine the pineapple and sugar and cook until the sugar melts. Let simmer a few minutes then let cool.
- In a baking dish, make layers of biscuits, pineapple and cream. Repeat the layers until ingredients run out, finishing with a layer of cream.
- Sprinkle generously with coconut and chill at least 2 hours before serving.
