If time is short you can use tinned pineapple instead of chopping up a fresh one to make this Christmas dessert - if you do, drain the syrup.


Serves: 6 

  • 1 tin sweetened condensed milk
  • the same tin's measurement of milk
  • the same tin's measurement of light thickened cream
  • 3 egg yolks, beaten
  • 1/2 cup raisins (white if possible)
  • 1/2 tablespoon cornflour
  • 1 small fresh pineapple, diced
  • 2 tablespoons sugar
  • 1 packet sponge finger biscuits
  • 100g freshly grated coconut

Preparation:1hour  ›  Extra time:2hours chilling  ›  Ready in:3hours 

  1. In a saucepan, combine condensed milk, milk, cream, egg yolks, raisins and cornflour. Cook over low heat, stirring, until thickened. Let cool.
  2. In a separate saucepan, combine the pineapple and sugar and cook until the sugar melts. Let simmer a few minutes then let cool.
  3. In a baking dish, make layers of biscuits, pineapple and cream. Repeat the layers until ingredients run out, finishing with a layer of cream.
  4. Sprinkle generously with coconut and chill at least 2 hours before serving.
