    The houses smells fantastic when this panettone is cooking! It's a very easy recipe. Merry Christmas!

    Makes: 1 panettone

    • 2 teaspoons dried yeast
    • 4 cups plain flour
    • 240ml warm milk
    • 4 tablespoons vegetable oil
    • 2 eggs
    • 1/2 teaspoon salt
    • 1 tablespoon sugar
    • few drops vanilla essence
    • 1/2 cup seedless raisins
    • 1/2 cup prunes, diced
    • 1/2 cup dried apricots, diced
    • 1/2 cup mixed candied fruit
    • melted butter, for brushing

    1. In a bowl, combine yeast with 3 tablespoons flour and the milk. Let dissolve for a few minutes.
    2. Add the oil, eggs, salt, sugar, vanilla and remaining flour then knead well. Let rise until doubled in size, 1 hour.
    3. Knead in the dried fruit until well mixed. Place dough in a paper panettone mold and let rise another hour. Meanwhile, preheat oven to 180 degrees C.
    4. Cut an X in the top of the panettone, brush with melted butter and bake 45 minutes or until risen and browned. Let cool and dust with icing sugar if desired.
