Pineapple Sticks with Yoghurt Dip

The air fryer is the only place I have pulled off these coconut crusted pineapple stick, I know they can be done in the oven but the result isn't as good.

Serves: 4 

  • Pineapple Sticks
  • 1/2 pineapple
  • 1/4 cup desiccated coconut
  • Yoghurt Dip
  • 1 small sprig fresh mint
  • 1 cup vanilla youghurt

Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

  1. Pineapple Sticks: Preheat your air fryer to 200 degreees C.
  2. Cut the pineapple into sticks, similar size and shape to chips.
  3. Dip the pineapple into desiccated coconut, the moisture in the pineapple is enough to make it stick.
  4. Gently lay the pineapple sticks into the basket and cook for 10 minutes
  5. Yoghurt Dip: Finely dice the mint leaves then stir through the vanilla yoghurt.
  6. To Serve: Place the dip in a small bowl in the centre of a large plate. Distribute the pineapple sticks around the bowl.
