Ingredients
Makes: 1 cheesecake
- 1 packet milk arrowroot biscuits, crushed
- 125g butter, melted
- 250ml thickened cream, whipped
- 250g cream cheese, softened
- 1 can condensed milk
- 1/6 cup lemon juice
- 1/6 cup lime juice
- (or just a third of a cup of either juice)

- Line bottom of 22 cm springform tin with baking paper.
- Mix crushed biscuits and butter together. Press biscuits into bottom and halfway up the sides of the springform tin. Refrigerate while making filling.
- With an electric mixer, beat whipped cream, cream cheese and condensed milk together until smooth.
- Add lemon and lime juices and beat well. Pour into biscuit crust, smoothing top.
- Refrigerate until set, 3 - 4 hours. Decorate with whipped cream and strawberries.

I made this cheesecake as recipe stated but it didn't turn out so I made it again the next day but with changes and it turned out perfect (it was for a friends birthday cake). I used 1 pkt Maria biscuits with softened butter I then only whisked the cream cheese and condensed milk. Once smooth I then added the thickened cream (not whipped) and blended together. I then added the lemon and lime juice plus 3 tsps of gelatin blended in 1/4 cup of boiling water. Once refrigerator I topped with grated lemon and lime zest. It was delicious - 04 Nov 2016
