Carrot and Pineapple Salad

    A different salad which combines pineapple with carrot and mayonnaise. It's the perfect accompaniment to a roast.

    Serves: 6 

    • 4 large carrots
    • 3 tablespoons raisins
    • 1 (250g) tin pineapple pieces in juice
    • 3 tablespoons mayonnaise
    • salt and pepper, to taste

    1. Peel and grate the carrots into strips in a food processor or with a grater. Place in a bowl and add the raisins.
    2. Drain the pineapple and add to the bowl, reserving the juice.
    3. Add the mayonnaise, mix well and season with salt and pepper. Add 4 tablespoons of the reserved juice and mix again. Chill until serving.
