Tomato, Melon and Basil Skewers
This is a beautiful recipe for the Christmas table or any summer party. They are drizzled with a balsamic reduction for a special touch.

6 tablespoons balsamic vinegar
1 ripe rockmelon
300g cherry tomatoes
fresh basil leaves, as needed
- In a small saucepan, heat the balsamic vinegar over low temperature until it reduces and takes on the consistency of syrup.
- Cut the rockmelon in half and remove the seeds. Cut into thick slices and then cubes, removing any peel.
- Alternate rockmelon cubes, cherry tomatoes and basil leaves on small wooden skewers. Place on a platter and drizzle with balsamic reduction just before serving.
