Tomato, Melon and Basil Skewers

This is a beautiful recipe for the Christmas table or any summer party. They are drizzled with a balsamic reduction for a special touch.


Serves: 6 

  • 6 tablespoons balsamic vinegar
  • 1 ripe rockmelon
  • 300g cherry tomatoes
  • fresh basil leaves, as needed

Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

  1. In a small saucepan, heat the balsamic vinegar over low temperature until it reduces and takes on the consistency of syrup.
  2. Cut the rockmelon in half and remove the seeds. Cut into thick slices and then cubes, removing any peel.
  3. Alternate rockmelon cubes, cherry tomatoes and basil leaves on small wooden skewers. Place on a platter and drizzle with balsamic reduction just before serving.
