Christmas Ice Cream Cake

    This recipe couldn't be simpler and is a wonderful dessert for the hot days of Christmas!

    Makes: 1 cake

    • 1 litre vanilla ice cream
    • 300g whole strawberries
    • 200g raspberries
    • 200g blueberries
    • 2 tablespoons sugar
    • raspberry coulis or syrup (optional)

    1. Line a springform cake tin with plastic wrap and dice half of the strawberries. Put the ice cream out until it is soft enough to work with.
    2. In a mixing bowl, combine the ice cream and diced strawberries and mix well. Pour into the cake tin and level with a spoon. Cover the top with plastic wrap and chill for at least 2 hours, preferably longer, until hard.
    3. Just before serving, in a bowl mix the remaining strawberries, raspberries and blueberries with the sugar.
    4. Unmold the cake onto a platter and top with the fruit. If desired, drizzle with raspberry coulis or syrup.
