This recipe couldn't be simpler and is a wonderful dessert for the hot days of Christmas!

1 litre vanilla ice cream
300g whole strawberries
2 tablespoons sugar
raspberry coulis or syrup (optional)

Line a springform cake tin with plastic wrap and dice half of the strawberries. Put the ice cream out until it is soft enough to work with.
In a mixing bowl, combine the ice cream and diced strawberries and mix well. Pour into the cake tin and level with a spoon. Cover the top with plastic wrap and chill for at least 2 hours, preferably longer, until hard.
Just before serving, in a bowl mix the remaining strawberries, raspberries and blueberries with the sugar.
Unmold the cake onto a platter and top with the fruit. If desired, drizzle with raspberry coulis or syrup.
