A perfect summer dessert with only three ingredients. In nice glasses it's fancy enough for a Christmas party.


Serves: 4 

  • 200g raspberries
  • 200ml thickened cream
  • 3 tablespoons white sugar
  • mint leaves, to garnish

Preparation:10min  ›  Extra time:1hour chilling  ›  Ready in:1hour10min 

  1. Blend the raspberries in a food processor to a smooth puree. If you don't like raspberry seeds you can push it through a sieve at this point. Set aside for a few minutes.
  2. Beat the cream with the sugar just to the stiff peak stage.
  3. Fill four champagne cups like this: add a spoonful of raspberries, a spoonful cream, then repeat to the top, ending with cream. Garnish with a mint leaf and chill one hour before serving.
