A perfect summer dessert with only three ingredients. In nice glasses it's fancy enough for a Christmas party.
200ml thickened cream
3 tablespoons white sugar
mint leaves, to garnish

- Blend the raspberries in a food processor to a smooth puree. If you don't like raspberry seeds you can push it through a sieve at this point. Set aside for a few minutes.
- Beat the cream with the sugar just to the stiff peak stage.
- Fill four champagne cups like this: add a spoonful of raspberries, a spoonful cream, then repeat to the top, ending with cream. Garnish with a mint leaf and chill one hour before serving.
