    This is the yummiest summer salad and it goes great with a Corona and lime on a hot day!

    Ingredients
    Makes: 1 salad

    • Salad
    • 1 medium size cos lettuce or sweet crunch lettuce, washed with core removed
    • 1 shredded coleslaw mix (e.g. Woolworths rainbow coleslaw mix)
    • 1 red capsicum, sliced
    • 1 yellow capsicum, sliced
    • 16 grape or cherry tomatoes, cut in half
    • 1 mango, peeled and diced large
    • 16 cooked QLD prawns, cleaned and deveined
    • 1 haloumi, sliced and cooked until golden brown
    • 1 avocado, peeled and diced same size as mango
    • Dressing
    • 100ml white balsamic vinegar
    • 1 lemon, juiced
    • 1 lime, juiced
    • 100ml honey
    • 70ml vegetable oil
    • 50ml olive oil
    • 20g red capsicum, finely diced
    • 20g yellow capsicum, finely diced
    • sea salt and cracked pepper, to taste

    Directions

    1. Salad: Layer the salad as follows: lettuce, coleslaw mix, capsicums, tomatoes, mango, pawns, haloumi and avocado.
    2. Dressing: Mix together all the ingredients for the dressing and combine. Spoon or pour dressing on the salad as per taste.

    Tip

    With the dressing you may want to alter the amount depending on your tastes to make it sweeter or sourer.
