    Love Cadbury picnic bars? Then try this yummy slice, full of wafer, caramel, rice bubbles, peanuts and chocolate. Easy to make and delish to eat.

    Ingredients
    Serves: 6 

    • 200g milk cooking chocolate
    • 30g copha
    • 3 (125g) packets vanilla wafers
    • 400g (2 bags) columbine caramels
    • 2 tablespoons thickened cream
    • 1 tablespoon butter
    • 1 cup rice bubbles
    • 2 cups salted peanuts (split the whole one's in half)
    • Chocolate Topping
    • 400g milk cooking chocolate
    • 60g copha

    Directions
    Preparation:20min  ›  Cook:10min  ›  Extra time:30min chilling  ›  Ready in:1hour 

    1. Line a 9cm x 13cm dish with baking paper.
    2. Melt the chocolate and copha together in a heat proof bowl over a saucepan of boiling water.
    3. Cover the bottom of dish with chocolate, before chocolate sets cover the chocolate with layer of vanilla wafer biscuits, cutting to fit. Refrigerate while making caramel.
    4. Melt the caramels, cream and butter together in a heat proof bowl over a saucepan of boiling water, stirring until smooth. This may take a while.
    5. Spread caramel over biscuit layer then quickly spread the rice bubbles, then the peanuts, over the caramel. Lightly press in.
    6. Refrigerate for 1/2 hour while caramel sets.
    7. Chocolate Topping: Melt the chocolate and copha together in a heatproof bowl over a saucepan of boiling water.
    8. Pour the chocolate over the peanuts and rice bubbles. Refrigerate until set; about an hour.
