These are a dark chocolate cupcake that make a great base for Halloween decorated cupcakes. There are lots of great Halloween themed sweets available that you can decorate with like the marshmallow ones I used in the photo.
Cup Cakes: Preheat oven to 180 degrees C. Place paddy cups (black if available) in a 12 hole muffing tray.
In medium bowl mix flour, baking powder, bicarb soda and salt then set aside. In small bowl mix boiling water and cocoa until dissolved.
In large bowl beat the butter with an electric mixer on medium speed 30 seconds. Gradually add sugar while beating well. Beat for 2 more minutes. Beat in vanilla and egg until blended.
Turn the mixer down to low then alternatively add the flour mixture and cocoa mixture, each time beating just until blended.
Divide batter among muffin cups. Bake 20 to 25 minutes or until toothpick comes out clean. Cool 5 minutes. Remove from the tray to cooling racks. Cool completely.
Icing: Over medium heat place the milk. chocolate chips and butter in a small saucepan the gently heat until the chocolate has melted. Refrigerate 30 to 45 minutes until completely cooled, stirring occasionally.
To Serve: Place the icing on the cupcakes. Add the Halloween themed sweets to the top of the cupcakes.
