Eve's Christmas Pud

    This is an easy plum pudding recipe that makes four individual puddings. It's best made about 3 months ahead.

    Makes: 4 puddings

    • 200g plain flour
    • 400g sugar
    • pinch salt
    • 1 teaspoon ground nutmeg
    • 1 teaspoon mixed spice
    • 1 teaspoon ground ginger
    • 200g raisins
    • 250g currants
    • 250g sultanas
    • 200g cherries, soaking in brandy for 1 month and diced
    • 6 eggs
    • juice, brandy or milk, as needed

    1. Grease four 600ml pudding basins.
    2. Mix flour, sugar, salt and spices. In a separate bowl, mix fruit together. Add fruit to flour and mix well.
    3. Add eggs and beat well. Add enough fruit juice, or brandy, or milk until dropping consistency is achieved.
    4. Put into greased basins then cover with a disc of greaseproof paper and one of foil, then steam until a wooden skewer comes out clean when inserted into the middle, about 2-3 hours.
    5. On Christmas day steam for another 1 - 1 1/2 hours, or microwave 3 minutes.
