This is probably the easiest Christmas pudding recipe you will ever find, perfect for a last minute Christmas dessert.


Makes: 1 pudding

  • 1 kg dried mixed fruit
  • 2 cups (500ml) pure orange juice
  • 2 cups (250g) self raising flour
  • 1 heaped teaspoon mixed spice

Preparation:30min  ›  Cook:1hour30min  ›  Extra time:8hours soaking  ›  Ready in:10hours 

  1. Place the fruit and orange juice in a large ceramic bowl. Stir well, cover and let soak overnight in the fridge.
  2. Next day, preheat oven to 150 degrees C. Grease a large pudding mould or basin.
  3. Add flour and spice to the soaked fruit and mix well.
  4. Pour into prepared mould and back 1 1/2-2 hours. If it is browning too fast, drape with foil.
