Lucknow Chicken Korma

    This is a very simply curry to prepare and very spicy and aromatic. You can reduce the cayenne if you like it less hot.

    Serves: 4 

    • 1 onion, diced
    • 2 cloves garlic
    • 2cm fresh ginger
    • 1/4 cup olive oil
    • 900g chicken breast, diced
    • 1 cup plain yoghurt
    • 1 tablespoon salt
    • 1 tablespoon cayenne
    • 1 teaspoon black cumin seeds
    • 1 teaspoon ground coriander
    • 20 black peppercorns
    • 10 whole cloves
    • 8 green cardamom pods
    • 1 tablespoon paprika

    1. In a food processor, puree the onion, garlic and ginger together.
    2. Heat olive oil in a saucepan and saute the onion puree until turning golden.
    3. Add all remaining ingredients except the yoghurt. When the chicken has cooked through a little, stir in the yoghurt. Reduce heat to low and simmer 20 minutes. Serve!
