A classic simple dinner, chicken is seasoned with lemon and thyme, wrapped in bacon and grilled until tender.


Serves: 4 

  • 1 lemon
  • 4 small boneless skinless chicken breasts
  • 1 clove garlic, finely diced
  • salt and pepper, to taste
  • 1/2 teaspoon dried thyme
  • 8 rashers streaky bacon
  • 500g cabbage, steamed
  • 500g new potatoes, boiled

  1. Cut the lemon in half, then cut one half into 4 wedges for serving. Squeeze juice from the other half over the chicken. Sprinkle with the garlic, salt and pepper.
  2. Preheat grill to medium.
  3. Sprinkle each chicken breast with dried thyme. Wrap two bacon rashers around each breast, securing with a toothpick if necessary. Grill 5-7 minutes on each side until done.
  4. Serve with steamed cabbage and new potatoes.
