    Tandoori chicken skewers are always the hit of the barbecue. Serve with naan bread and raita if desired.

    Makes: 6 - 8 skewers

    • 2 tablespoons tandoori masala spice mix
    • 1 tablespoon lemon juice
    • 2 tablespoons plain yoghurt
    • 1 teaspoon fresh ginger, diced
    • 1 clove garlic, crushed
    • 1/2 - 1 teaspoon chilli powder
    • 225g chicken, cut into strips
    • 1 tablespoon fresh coriander leaves, chopped
    • 6-8 wooden skewers, soaked

    1. In a mixing bowl, combine tandoori masala, lemon juice, yoghurt, ginger, garlic and chilli. Marinate the chicken 2 hours in the fridge.
    2. Preheat the barbecue for high heat and oil the grate.
    3. Thread the chicken onto the skewers and cook 5-7 minutes or until cooked through. Scatter with coriander leaves and enjoy!
