Summer Chickpea Salad

    Delicious summery salad best served cold, is a great companion to any meal. All of the seasoning is done to taste as everyone is different.

    Serves: 4 

    • 600g chickpeas (boiled or canned)
    • 2 garlic cloves, diced
    • handful of seseme seeds
    • 1 onion (any color), diced
    • 1 tomato, diced
    • 1 cucumber, cubed
    • lettuce leaves, shredded
    • olive oil, as needed
    • 1 tablespoon sesame oil
    • cumin, to taste
    • salt and pepper, to taste
    • 1-4 tablespoons apple cider vinegar
    • parsley, chopped

    1. Crush a third of the chickpeas with a potato masher with the garlic, sesame seeds and onion in a bowl.
    2. Add the rest of the vegetables and stir in the seasonings as desired.
    3. Serve :)


    More vegetables can be added if preferred.
