Cheesy Chicken Burgers

    Chicken burgers made a bit different with red capsicum and grated Cheddar cheese in the mix. Delicious on the BBQ or under the grill.

    Makes: 6 burgers

    • 1/2 tablespoon vegetable oil
    • 1 clove garlic, crushed
    • 1 small onion, diced
    • 1/2 red capsicum, diced
    • 450g chicken mince
    • 2 tablespoons Greek yoghurt
    • 1 tablespoon mixed herbs
    • 50g Cheddar cheese, grated
    • salt and pepper, to taste
    • 50g breadcrumbs

    Preparation:30min  ›  Cook:10min  ›  Ready in:40min 

    1. Heat the oil in a frying pan and gently cook the garlic and onion 5 minutes. Add the capsicum and cook a further 5 minutes.
    2. In a bowl, combine chicken, yoghurt, onion mixture, herbs and cheese. Season with salt and pepper and mix well. Mix in the breadcrumbs.
    3. Divide in 6 balls and shape into patties. Chill 20 minutes before cooking.
    4. Cook under a preheated grill 8 minutes each side.
