Chicken and Ham Fried Rice

    Chicken and ham fried rice is a great one bowl lunch or if you want a more substantial meal serve it with mini spring rolls or wontons.

    Serves: 2 

    • 300g long grain white rice
    • peanut oil, as needed
    • 1 onion, sliced
    • 1 cooked chicken breast, diced or shredded
    • a few slices ham, diced
    • 2 eggs
    • dash milk
    • pinch Chinese five spice powder
    • 1/4 cup frozen peas
    • bunch spring onions, diced
    • soy sauce, to taste
    • salt and pepper, to taste

    1. Boil the rice in salted water until done, drain and set aside.
    2. Heat a little oil in a wok. Add the onion and cook 5 minutes. Add chicken and ham and cook through, about 5 minutes. Meanwhile, whisk the eggs in a bowl with a little milk and the Chinese five spice.
    3. Add the rice to the wok and toss well, adding a little more oil if necessary to prevent sticking. Stir over low heat about 5 minutes to heat the rice.
    4. Add the peas and spring onions and cook 2 more minutes. Pour the egg mix over the rice and stir constantly so the rice is coated. Season with soy sauce, salt and pepper. Serve.
