Sharon's Chicken Fried Rice

Adjust the soy sauce and chilli flakes of this chicken fried rice recipe to your own personal taste, or use whatever vegetables you have on hand.


Serves: 2 

  • oil, for frying
  • 2 chicken breast halves, diced
  • salt and pepper, to taste
  • 3 capsicums, different colours, diced
  • 250g mushrooms, sliced
  • 3 small red onions, diced
  • 250g cooked white rice
  • soy sauce, to taste
  • chilli flakes, to taste

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Heat a little oil in a wok and add the chicken breasts. Add salt and pepper while frying. When just about done, set aside.
  2. Add a little more oil and fry the capsicums, mushrooms and onions. When soft, add the rice and toss for a couple of minutes.
  3. Return the chicken to the wok, heat through a few minutes and season with soy sauce and chilli flakes. Serve.
