Crush the garlic and salt together in a mortar and pestle to make a paste. In a bowl, combine with all the remaining ingredients and the chicken. Mix well and marinate at least 30 minutes.
Remove the chicken from the marinade and set aside. Simmer the marinade until reduced by half to a thick sauce.
Place the chicken on the grill rack and brush with the marinade. Cook the chicken under the grill, turning when halfway done and brushing with more of the marinade, about 15 minutes total.
