Grilled Teriyaki Chicken

    We prefer our teriyaki chicken a bit less salty than the store bought kind so we make our own sauce. This recipe is also good on the barbecue.

    Serves: 4 

    • 1 large garlic clove
    • 1/2 teaspoon salt
    • 2-3 tablespoons soy sauce
    • 1/2 teaspoon freshly grated ginger
    • 5 tablespoons honey
    • 1 tablespoon dry sherry
    • 1 tablespoon vinegar
    • 500g boneless skinless chicken breast

    1. Crush the garlic and salt together in a mortar and pestle to make a paste. In a bowl, combine with all the remaining ingredients and the chicken. Mix well and marinate at least 30 minutes.
    2. Remove the chicken from the marinade and set aside. Simmer the marinade until reduced by half to a thick sauce.
    3. Place the chicken on the grill rack and brush with the marinade. Cook the chicken under the grill, turning when halfway done and brushing with more of the marinade, about 15 minutes total.
