Carnival Lasagne with Meatballs

This is a traditional Italian lasagne recipe that is prepared both on the Sunday before Carnival or on the day of the Carnival. A very filling lasagne, tasty and full of flavour.


Serves: 8 

  • Meatballs
  • 500g mince, half beef, half pork
  • 400g stale bread
  • 200g warm milk, to soak the bread
  • 5 eggs
  • 150g grated cheese
  • garlic, diced, to taste
  • parsley, chopped, to taste
  • salt and pepper, to taste
  • oil for frying
  • Tomato Sauce
  • exta virgin olive oil
  • 1 onion, diced
  • 2kg tomatoes
  • Lasagne
  • 1 (500g) package lasagne
  • 400g ricotta
  • 250g mozzarella, cut in small pieces
  • 1 (400g) tin peas
  • 6 hard-boiled eggs, sliced
  • 200g grated Parmesan or similar hard cheese

  1. Meatballs: In a bowl add the mince and the stale bread soaked in warm milk (wrung out).
  2. Add the eggs, grated cheese, garlic, parsley, salt and pepper then knead thoroughly.
  3. Let stand for about 15 minutes. Prepare the meatballs to about the size of a hazelnut. Heat the oil then fry.
  4. Tomato Sauce: Heat the extra virgin olive oil in a frypan then fry the onion and add the tomatoes. Let cook for about 20 minutes far over medium heat.
  5. Lasagne: When the sauce and the meatballs are cooked you can begin to assemble the lasagna.
  6. Take a rectangular dish and pour in a little sauce. Sit on top the first layer of lasagne then cover with more sauce.
  7. Build the lasagne by dividing the filling into 4 equal parts. Cover the first layer of pasta with a quarter of ricotta, mozzarella, meatballs, peas, hard-boiled egg slices, sauce and grated Parmesan cheese.
  8. Cover this layer with another of the lasagne and sauce. Repeat this process for other 2 layers.
  9. Finally on the top layer of sauce add the ricotta cheese, mozzarella, sauce, meatballs and grated cheese.
  10. Bake at 200 degrees C for about 1 hour. Let stand in the oven turned off for 20 minutes and then serve the lasagne.
