Place the elderberries, water and cloves in a saucepan. Bring to the boil, then reduce heat and simmer 30 minutes. Remove from the heat and mash the berries with a potato masher.
Strain the liquid through a fine sieve, pressing down the berries to get all the juice.
Stir the honey into the still warm liquid until dissolved. Pour into a bottle or jar and store in the fridge. The cordial will keep 2-3 months.
