    A great quick lunch for 6 hungry people, ready cooked chicken is simmered with tikka sauce and vegetables and served in pita breads.

    Serves: 6 

    • drizzle of olive oil
    • 1 tin sweetcorn, drained
    • 1/2 red capsicum, diced
    • 1/2 green capsicum, diced
    • 1/2 yellow capsicum, diced
    • 1/2 onion, diced
    • tikka curry sauce, as desired
    • salt and pepper, to taste
    • 1 ready cooked chicken, shredded
    • 6 large pita breads

    1. Heat the oil in a frying pan and add the corn, capsicums and onions. Cook gently until soft.
    2. Add the chicken and tikka sauce and heat through. Season with salt and pepper to taste. Either roll up in the pita breads or cut the breads in half to make pockets and fill those.
