This makes one great roll perfect for the weekend. A great use for leftover roast chicken, simple and delicious.

Serves: 1 

  • 1 tablespoon oil
  • 2 cloves garlic, crushed
  • 120g cooked prawns
  • 1/2 cup leftover diced chicken
  • 1 tablespoon fresh coriander, diced
  • salt and pepper, to taste
  • 1 roll
  • 1/4 cup grated cheese

  1. Heat the oil in a skillet then gently cook the garlic over medium heat, stirring constantly, until fragrant. Add prawns and chicken then cook until heated through. Stir through the coriander and season with salt and pepper.
  2. Toast the roll under a grill.
  3. Top each roll with the prawn and chicken mixture then sprinkle with cheese. Place back under the grill until the cheese has melted.
