Spicy Chicken Cruncher

    A sandwich that is a meal in itself, chicken is marinated in harissa, fried and served with bacon, onion, rocket and cheese.

    Makes: 1 sandwich

    • 1 chicken breast fillet
    • 1 heaped teaspoon harissa
    • 2 rashers bacon
    • 1 small onion, sliced
    • 2 slices thick bread
    • olive oil, as needed
    • handful rocket leaves
    • 2 slices Manchego cheese
    • Dressing
    • 1/2 teaspoon harissa
    • 2 teaspoons mayonnaise

    1. Combine the chicken breast and 1 teaspoon harissa and marinate in the fridge at least 30 minutes.
    2. Heat a cast iron frypan or grill plate and cook the chicken, turning once. Remove and place on a chopping board.
    3. In the same frypan cook the bacon and onions until the bacon is crispy and the onions done. Set aside.
    4. Brush the bread on both sides with olive oil and quickly fry in the frypan.
    5. Meanwhile, slice the chicken and make the dressing by combining 1/2 teaspoon harissa with the mayonnaise.
    6. Assemble the sandwich with rock first, then bacon, chicken, cheese and onions. Drizzle over the dressing and top with the other slice of bread.
