Apple Sour Cream Slice

    The sour cream in this apple slice recipe gives an amazing creamy texture without getting too sweet. Perfect while slightly still warm on a cold evening.

    Serves: 6 

    • Base
    • 1 packet vanilla cake mix
    • 1/2 cup desiccated coconut
    • 125g butter, melted
    • Apples
    • 6 apples
    • 1/4 cup water
    • Topping
    • 1 teaspoon sugar
    • 1 teaspoon cinnamon
    • 300g sour cream

    1. Preheat the oven to 180 degrees C. Grease a 20cm square cake tin. With one sheet of baking paper line the base and the two opposite sides letting the paper extend 5cm over edge of the tin.
    2. Base: Combine cake mix, coconut and butter in a medium bowl. Press mixture evenly over base of prepared tin. Cook for 15 minutes or until lightly browned. Cool slightly.
    3. Apples: Peel, core and cut the apple into approximately 2cm pieces. Add to a saucepan at medium heat with 1/4 cup of water. Simmer gently until the apple softened but still holds its shape.
    4. Topping: Combine the cinnamon and sugar together in a small bowl. Stir sour cream making sure it is smooth.
    5. To Assemble: Spread apple evenly over base, then spread sour cream evenly over apple and sprinkle with cinnamon sugar. Cook for further 20 minutes, or until sour cream has set.
