Heat a saucepan of water to a boil and add the chicken. Poach until cooked through.
In another saucepan, combine the tomatoes, garlic, basil, parsley, salt and pepper. Simmer 6 minutes then puree in a blender or with a hand blender.
Drain the poached chicken fillets. Set one aside. Combine the remaining chicken in the blender with the eggs and blend until smooth. Preheat the oven to 180 degrees C and line a baking tray with baking paper.
Place the chicken mixture on the tray and spread out to the shape of a pizza base. Bake in the oven 15 minutes, or until firm.
When the base is cooked, spread with the tomato mixture. Top with the onion, capsicums, mushrooms and remaining chicken fillet. Sprinkle with chilli flakes. Bake 20 more minutes and serve.
