Poached Chicken in the Microwave

    This is a basic master recipe for cooking chicken breasts in the microwave. You can use the breasts in any recipe, or just serve them with a sauce and some rice for an easy dinner.

    Serves: 4 

    • 4 chicken breasts, skin removed and halved
    • 1/2 cup chicken stock
    • 3 sprigs fresh tarragon

    Preparation:5min  ›  Cook:8min  ›  Ready in:13min 

    1. Place the chicken breasts in a microwave safe dish. Pour the stock over and sprinkle with tarragon.
    2. Cover with microwave safe plastic wrap. Cook at 100% power for 8 minutes.

    I like the idea of easy, fast chicken. I turned the chicken at 4 minutes and cooked 4 minutes more. The chicken came out very tough. My microwave is 900W at full power. To get tender chicken, I think the times will vary for each microwave. I used a bit more stock than written to have some leftovers, it made into a nice sauce when thickened a bit.
